“When you don’t know what to do, go out in the vineyards, there’s always something to do there” are the words of Gilberto Boniperti, a winemaker who marries both traditional winemaking practices & modern techniques in enology beautifully. His playground in the northerly obscured subregion of Fara in Piemonte, and Barton is his highest quality bottling. Its primarily Nebbiolo, yes, but there’s also an addition of Vespolina as well – its contribution being that it lends a softness that tames Nebbiolo’s prolific austerity. That being said, the flavors & aromatics are no less intoxicating than the Barolo’s & Barbaresco’s we’ve all come to adore, just w/ a slightly fleshier spin on it. It’s overall character just screams for roasts of game, pork, and duck, but believe us you cant go wrong enjoying it all on its own (especially given its age). Farmed sustainably & without fining.
